Jeikobu mentioned The Undiscovered Country, and that's my favourite as well. I think it has the most complex plot, and doesn't depend on (as much) action to communicate itself. Plus, Christopher Plummer was a fabulous Klingon!
On the whole, of the NG movies, the only one I liked as much as the first six was First Contact, which I thought was superbly done. Generations wasn't bad, but I was rather underwhelmed by Insurrection.
