There are TONS of openings I love, though I'll narrow them down to my three favorites.

Tengen Toppa Gurren Lagann(Second, with the same verse of as the first but different animation in some parts)

Cowboy Bebop-Whoo boy, nothing makes a person excited like Tank!

Baccano!-Clever way of introducing characters and an awesome jazz song. Heck yes.

As far as endings go, I'm very fond of Fullmetal Alchemist: Brotherhood's first ending. Very fond.

I agree with the above, and add my own choices:

Tengen Toppa Gurren Lagann - Minna no Peace (Second closing): It's quite a change from the first one, and it's definitely for the better. It reflects the change in the series' mood that justified the change in music.

Full Metal Alchemist (first series) - Ready Steady Go (second opening).

Big O - And Forever (non-Toonami closing): It's not your usual closing; it's an English-language duet accompanied by piano, and I think that's what makes it stick out more.

Trigun - first opening (I'm not done with it, so I don't know if it changes later on.)

FLCL - closing.

Just for clarification, Ready Steady Go was FMA's second opening, not third.

Anime opening and endings.

As much I dislike Gundam 0083, I did like the music to it and I love the first opening,

Gundam 0083 first opening

Also, I like both endings to Gundam 0083, Magic and Evergreen.
