Is there a way that we can make posts without always making HTML to color our posts or make it bigger or smaller or change the font?

Like we could have in the options menu, and we could make our post font a certain color, size and font.

Can this be done?

It can be done, but it would take quite a while for what it's worth.

My suggestion is, when you need to use the [ color ] tags, use the Quick Reply box (like I'm doing now), and the first post you make, copy the color codes with CTRL + C. Then, all you have to do is paste them into the box whenever you want them...quick and handy!
